Red Velvet Truffles
These are a play on how red velvet cake used to be made—with beets to give it that red color, not food coloring. The ganache center is made with a mix of organic cocoa powder, dark chocolate, and white chocolate--made vibrantly red from beets soaked in heavy cream. They are hand rolled and dipped in white chocolate with a little side dip into dark chocolate for some added flair
